The Hawaiʻi Tourism Authority shares its condolences following the passing of Hawaiʻi-based chef Mark Ellman. He was a beloved member of Hawaiʻi's culinary community who advocated for buying local and our thoughts go out to Mr. Ellman's family, friends, and colleagues during this difficult time.
 
“'Meet me at Avalon!' was the culinary mantra for many of us who frequented Lahaina, Maui in the 1990s. Together, Chef Mark and Judy Ellman created a magical dining experience at Avalon Restaurant & Bar which became my first portal into the emerging realm of Hawaiʻi Regional Cuisine.
 
With the recent news of Chef Mark’s passing, my Aloha is extended to Judy, whose grace and elegant nature was matched by Chef Mark’s creativity and greatness in the culinary arts. A hui hou, Mark."
